Healthy Blueberry Banana Muffins
These muffins are moist and delicious, the kids (and adults) love them for a quick healthy snack or breakfast.
- 3/4 cup all-purpose flour (spooned and leveled)
- 1 cup whole wheat flour (spooned and leveled)
- 1/4 cup natural wheat bran
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 cup (1 stick) unsalted butter, room temperature
- 1/3 cup granulated white sugar
- 1/3 cup packed brown sugar
- 2 large eggs
- 2 ripe bananas
- 1/3 cup reduced fat milk (whatever you have on hand, I use 2%)
- 1 teaspoon vanilla extract
- 1 cup frozen blueberries
Cooking Them Up:
Preheat oven to 375ºF. Line 18 muffin cups with paper liners (or spray with cooking spray).
In a bowl, whisk together the flours, wheat bran, baking soda, and salt.

These look great! And I love a muffin recipe that makes more than a dozen! (Mind you, I usually double or triple whatever recipe I'm using... I get more bang for my buck (or in this case, my time) that way!) I think BB would love these!
